My Inclusive Cookbook is an initiative by volunteers of the PSU (Portland State University) Food Pantry to bring people together through food. This website is designed for people to feel included and welcomed by being given a safe space to share unique and special recipes, using the items from the pantry. Launched in Spring of 2021, we hope that this website will be giving you a sense of belonging both culturally and culinarily.

Located at Portland State University in Portland, Oregon, the Food Pantry is a student-found organization that works towards disrupting food insecurity in and around campus and assists students in acquiring food items. Working with partners such as the Oregon Food Bank, the pantry serves nearly 2,000 students with their annual food provisions and maintains a diverse and welcoming environment.

THE INTERNS BEHIND THE THOUGHT & EXECUTION

Manasa Jajam, Rahaf Alzghoul and Katherin Gomez-Arboleda are students of Portland State University who interned for the PSU Food Pantry during 2020 - 2021 as Student Leaders for Service. Together, they worked towards creating and developing this inclusive space for everyone to share their recipes which are close to their hearts and homes.
While doing coursework in Electrical Engineering, Manasa pulled her heartstrings attached to her home in India for its authentic cuisine and rich culture.
In the process of finishing up her undergrad in Biology with a pre-Med track, Rahaf drew inspiration from the aromas of Jordan from the Middle-East with tantalizing flavors.
Getting ready to graduate in Social Work, Katherin represented the rhythmic tradition of Colombia with colorful plates and scrumptious tastes.
In our mission for working towards everyone having a full plate, we hope you find a delicious meal from our labor of love.
