Egg Curry

Ingredients required:

  • Oil

  • Onions - 3, diced

  • Green chilies - 4

  • Ginger + garlic paste

  • Turmeric powder

  • Chili powder

  • Salt

  • Garam masala/spices

  • Eggs - boiled

  • Coriander - chopped

Preparation:

  • In a pot add 2 Tbsp oil. Then, add 3 diced onions and fry until they turn goldish-brown.

  • To this add 4 green chillies and stir. After stirring add ½ of a teaspoon of ginger+garlic paste. Stir again.

  • To this mixture, add ¼ teaspoon of turmeric powder, 1 teaspoon of chilli powder, ¾ teaspoon of salt, a pinch of garam masala and stir until everything is completely mixed together.

  • Add eggs into this mixture without mashing them. After one side of the eggs are cooked, flip them to cook the other side as well.

  • Cook this until moisture evaporates. When evaporation occurs, simmer the heat and add some water accordingly.

  • Once the eggs are cooked, serve in a bowl and garnish with coriander.
