Egg Fried Rice

Ingredients required:

  • Rice - For 2-3 servings: 1.5 Cups.

  • 3 Eggs

  • Vegetable Oil

  • Salt

  • Pepper

  • Soy Sauce - 4 Tbsp.

  • Vinegar - 2 Tbsp.

  • 4 Cloves Garlic - finely chopped

  • Grated ginger - 2 Tbsp.

  • 3-4 Green Chilis.

  • 1 Cup Cabbage - finely chopped

  • 1 Carrot

  • 1 Onion - finely chopped.

Preparation:

  • We can use leftover rice or freshly cooked rice.

  • Prepare the eggs first. Break the eggs in a bowl and beat them for a while. To this add salt and pepper.

  • Take a Non Stick pan and add 1 Tbsp. oil and place the flame on medium. Once the oil is heated up add the beaten eggs and scramble them. Break them into small pieces and keep them aside.

  • Take a large wok and add 2 Tbsps. oil and heat it.

  • Add Ginger, Garlic and Chilis and sauté them on high heat for a minute.

  • Add finely chopped vegetables and heat them on high flame for 2-3 minutes.

  • To this add the cooked rice, soy sauce, vinegar and toss it well with a spatula so that the rice is not mushed up.

  • To this add the scrambled eggs and toss it well. You can now turn off the stove and garnish this with coriander.
