Kidney Beans Curry

Ingredients required:

  • Dry Kidney Beans - Soak for at least 8 hours or overnight.

  • Turmeric

  • Salt

  • Garam Masala

  • Red Chili Powder

  • Ground Coriander

  • Vegetable Oil

  • Ginger - Minced

  • Garlic - Minced

  • Cumin Seeds

  • Onion Minced

  • Tomato Puree

  • Plain Yogurt

  • Fresh Cilantro - 2 sprigs, leaves finely chopped

Preparation:

  • Drain and rinse the soaked beans and add them to a pressure cooker along with some salt, turmeric and add enough water. Cover the pressure cooker with a lid and cook the beans for around 20 minutes or until tender.

  • Heat oil in a skillet over medium heat and add ginger, garlic, cumin seeds, onions and tomato puree and cook and stir them for 2 - 4 minutes.

  • To this add garam masala, ground coriander and red chili powder and cook for 2 minutes.

  • To this mixture add the cooked beans and yogurt and cook on simmer for about 5 minutes.

  • Turn off the flame and top the curry with Cilantro.
