Mixed Vegetable Rice

Ingredients required:
Vegetable Oil
White Rice
Mixed Vegetables (Carrot, Beans, Potatoes, etc.,)
Red Onion -1
Tomato -1
Ginger Garlic Paste
Bay Leaf
Caraway (Shahjeera)
Cinnamon
Cloves
Salt
Turmeric
Pepper
Masala Powder
Preparation:
In a Cooker add Vegetable Oil 2 Tbsps., Cloves, Caraway, Bay leaf and fry them till there is an aroma.
Slice a red onion and add it to the mixture and fry until it turns transparent. Later, add Mixed Vegetables and allow them to fry along with the onions.
Once the veggies are fried, add 1 cup of cut tomato to it. (Do not add tomato with the other veggies). Once they are fried, add Ginger Garlic Paste and Sauté for 1 Minute.
To this, add Salt 2 Tbsps., Turmeric - Half Tbsp., Pepper - 1 Tbsp., Masala Powder - 2 Tbsps. (It’s recommended to add Vegetable Biryani Masala Powder for better taste).
To this mixture, add white rice and add enough water to it. To measure this - 1 cup of white rice requires 2 cups of water. Close the cooker with a lid and put the stove on low flame for about 3 whistles.
After 3 whistles, put the cooker aside for sometime so that the pressure cools down.
