Pumpkin Bites

Ingredients required:
Old - Fashioned Rolled Oats - 1 1/4 cups (quick oats can also be used)
Chia Seeds - 1 tbsp. (optional)
Ground Cinnamon - 1 1/2 tsps. (optional)
Salt
Peanut Butter - 1/2 cup
Pumpkin Puree - 1/4 cup
Honey - 1/4 cup
Vanilla Extract - 1 tsp. (optional)
Mini Chocolate Chips - 1/4 cup (optional)
Preparation:
In a medium to large bowl, add the oats, chia seeds, cinnamon, and salt. With a mixing tool such as a whisk or blender, mix until ingredients are combined.
Add the peanut butter, pumpkin puree, honey, and vanilla. Mix until the ingredients come together. Stir in the mini chocolate chips if you are using them.
Roll the mixture into balls, about 2 tablespoons per ball. Place the pumpkin energy balls into an airtight container and store in the refrigerator for up to 1 week.
