Pumpkin Bites

Ingredients required:

  • Old - Fashioned Rolled Oats - 1 1/4 cups (quick oats can also be used)

  • Chia Seeds - 1 tbsp. (optional)

  • Ground Cinnamon - 1 1/2 tsps. (optional)

  • Salt

  • Peanut Butter - 1/2 cup

  • Pumpkin Puree - 1/4 cup

  • Honey - 1/4 cup

  • Vanilla Extract - 1 tsp. (optional)

  • Mini Chocolate Chips - 1/4 cup (optional)

Preparation:

  • In a medium to large bowl, add the oats, chia seeds, cinnamon, and salt. With a mixing tool such as a whisk or blender, mix until ingredients are combined.

  • Add the peanut butter, pumpkin puree, honey, and vanilla. Mix until the ingredients come together. Stir in the mini chocolate chips if you are using them.

  • Roll the mixture into balls, about 2 tablespoons per ball. Place the pumpkin energy balls into an airtight container and store in the refrigerator for up to 1 week.
