Vegan Lentil Tacos

Ingredients required:

  • Lentils - 1 cup

  • Vegetable oil - 1 Tbsp.

  • Onion - 1/2 (chopped)

  • Chili powder - 1 ½ Tbsps.

  • Ground Cumin - 1 ½ Tsps.

  • Garlic powder - 1 Tsp.

  • Dried Oregano - ½ Tsp.

  • Salt - ½ Tsp.

  • Black pepper - ¼

  • Nutritional Yeast - 1 ½ Tbsps. (optional)

  • Water - ½ cup

  • Cilantro leaves - 2 Tbsps. (optional)

Preparation:

  • In a medium saucepan, bring 4 cups of water to boil, then add the lentils to low heat. Cook for about 20 minutes or until the lentils are tender. Drain excess water.

  • In a large skillet, heat the oil over medium-high heat. Add the onion, and stir for 7 minutes.

  • Add the chili powder, cumin, garlic powder, oregano, salt, pepper, and stir for 30 seconds.

  • Add the lentils, nutritional yeast (if using), and ½ cup water to the skillet. Cook and stir, coarsely mashing the lentils with a fork, until almost all of the water is absorbed. Add cilantro (if using).

  • Serve as taco meat in dishes like tacos, burritos, salads, nachos, and more!
