Vegan Lentil Tacos

Ingredients required:
Lentils - 1 cup
Vegetable oil - 1 Tbsp.
Onion - 1/2 (chopped)
Chili powder - 1 ½ Tbsps.
Ground Cumin - 1 ½ Tsps.
Garlic powder - 1 Tsp.
Dried Oregano - ½ Tsp.
Salt - ½ Tsp.
Black pepper - ¼
Nutritional Yeast - 1 ½ Tbsps. (optional)
Water - ½ cup
Cilantro leaves - 2 Tbsps. (optional)
Preparation:
In a medium saucepan, bring 4 cups of water to boil, then add the lentils to low heat. Cook for about 20 minutes or until the lentils are tender. Drain excess water.
In a large skillet, heat the oil over medium-high heat. Add the onion, and stir for 7 minutes.
Add the chili powder, cumin, garlic powder, oregano, salt, pepper, and stir for 30 seconds.
Add the lentils, nutritional yeast (if using), and ½ cup water to the skillet. Cook and stir, coarsely mashing the lentils with a fork, until almost all of the water is absorbed. Add cilantro (if using).
Serve as taco meat in dishes like tacos, burritos, salads, nachos, and more!
